Mesu is written in katakana, not hiragana. And for the matter, mesu in hiragana doesn’t mean surgery. Surgery is the first 2 kanji there, 手術, shujutsu. Mesu is a katakana loan word from Dutch (mes), used in Japanese as scalpel.
